なにわ割烹とビーフカツ
最近、日本に来ると必ずと言っても良いほど食べるのが北新地「さか本」のビーフカツ。大阪までの新幹線代どころか、シアトルから日本までの飛行機代を払ってまで食べる価値のある逸材だ。 「なぜ割烹なのにビーフカツがあるのだろう」と不思議に思っていたのだが、今回「さか本」のおやじさんが先代の下で修行したという「喜川」に言ってその謎が判明した。 喜川の先代の大将が、いわゆる「洋食」を割烹料理に取り込んだ上で日本料理として完成させたのが「なにわ割烹」であり、その流れを汲むのが「さか本」のビーフカツなのである。 海外の良い物を単に輸入するだけでなく、それを自分のものとした上で完成度を高める。なんだかんだ言っても日本の食文化は世界一だとつくづく思う。
