人や動物の腸管、土壌、水中など自然界に広く分布し、ボツリヌスと同じ酸素を嫌う嫌気性菌です。 健康な人の便からも検出され、その保菌率は食生活や生活環境によって異なり、また年齢による差も認められ、青壮年よりも高齢者のほうが高い傾向があります。 また、家畜(牛、豚、ニワトリ)などの糞便や魚からも本菌は検出される。食品では、特に食肉(牛、豚、鶏肉など)の汚染が高いようです。 この細菌は熱に強い芽胞を作るため、高温でも死滅せず、生き残ります。したがって、食品を大釜などで大量に加熱調理すると、他の細菌が死滅してもウエルシュ菌の耐熱性の芽胞は生き残ります。 また、食品の中心部は酸素の無い状態になり、嫌気性菌のウエルシュ菌にとって好ましい状態になるため、食品の温度が発育に適した温度まで下がると発芽して急速に増殖を始めます。食品の中で大量に増殖したウエルシュ菌が食べ物とともに胃を通過し、小腸内で増殖して、菌
