3 困った時の名無しさん :03/02/09(日) 12:57 肉500ｇ＊2くらい大きい鍋に水、ねぎの青い部分２本分くらいを適当にちぎって。それにしょうが１かけら、にんにく2,3個を投入。 30分ほど茹でこぼす。途中あくを取る。別の鍋にしょうゆカップ2、紹興酒カップ2、茹で汁カップ1、にんにく2,3個を投入。 10分ほど茹でる。その後は1日放置プレイ。ちなみに、最初の茹で汁でインスタント麺を食す。醤油だれは煮卵にも使う。冷凍して次作る時も使う。そんな感じで、ウマー。 7 困った時の名無しさん :03/02/09(日) 21:19 豚肩肉やロースなどもじっくり煮込むと柔らかくなるのでしょうか？バラ肉だと柔らかいイメージがあるんだけど。チャ－シューは柔らかいのが好きです！
