たったひとつの「接客術」で、ある飲食店の虜になってしまった話
学生時代に、飲食店でアルバイトをしていた。 「アットホームな職場」、「安心のオープニングスタッフ」。求人誌はどれも胡散臭く感じられたため、前から気になっていたダイニングバーに飛び込んで、半ば強引に雇ってもらった。 未経験だったため、最初の2カ月はお客さんの前に立つことすら許されないまま、皿を洗って過ごした。そのうち先輩たちが軒並み辞めて、店としてはかなり消極的な理由で、僕の接客デビューが決まった。 愛想は良い方だとわかっていたから、接客で売り上げを伸ばすことの楽しさには、すぐ気付いた。「また来るね」と言ったお客さんが本当に来てくれることがやり甲斐で、金曜・土曜に2時間制を敷かれるとサービスに時間をかけられないことだけが不満だった。 高そうなスーツと、高さのあるヒールを履いたカップルが来ると、あえて男性側に気を配る。 おしぼりを男性に渡す素振りをして、その男性が女性を優先させる人か判断する。
